The Exchange Brewery is a premium brewery, retail store, and tasting facility located in Niagara-on-the- Lake, ON, that makes more than 20 beers in house.

Project Summary

The Exchange Brewery recently developed a new hop seltzer beverage. With CRI’s expertise, both refrigerated and unrefrigerated analysis of their product was conducted over a 12-month period to determine the presence of any microorganisms or contaminants. Recommendations were also provided to ensure maximal performance of the beverage based on the results.

The Challenge

They needed evaluation of the performance of a new hop seltzer beverage over a 12-month period based on both refrigerated and unrefrigerated storage conditions. 

The Solution

Fanshawe faculty and student research assistants 

  • Tested samples for presence of microorganisms, including yeasts and molds, aerobic bacteria, E. coli and coliforms, and Salmonella 
  • Tested pH levels of samples 
  • Provided recommendations to ensure maximum performance of the beverage based on results
