The Chef’s Table: Teaching Restaurant & Cafe

Gain hands-on experience delivering professional culinary and hospitality service in a live, public-facing restaurant and café setting. Working alongside students from across the school, you’ll master kitchen operations, front-of-house service, and management skills with real guests in an environment that mirrors true industry pace and expectations.

Motion Capture (Mocap) Studio

Record the movements of actors and objects in 3D space using multi-camera arrays and advanced motion tracking technology. Students in the Animation, 3D Animation and Character Design and Game - Design programs use this specialized studio to create realistic animations for films, video games, and digital media.

Simulated Office Administration Resource Room (SOARR)

Learn in one of the few simulation labs of its kind in Ontario, designed specifically for future office professionals. The Simulated Office Administration Resource Room (SOARR) replicates a modern workplace where you’ll build job readiness through hands-on practice in customer service, phone techniques, records management, and scheduling using industry-standard office software and hardware.

Troy Spicer

Professional Butchery Techniques Program Coordinator

Troy Spicer is a professor in the School of Hospitality and an expert butcher who brings real industry leadership into the classroom. He teaches the Professional Butchery Techniques program, helping you build the highly sought-after skills employers are actively hiring for across Canada. Troy was selected to coach Canada’s junior butchers at the prestigious World Butchers’ Challenge, often called the “Olympics of Meat”, giving students a direct connection to elite-level competition and global butchery standards. His real-world experience and passion for the trade help prepare you for a rewarding, hands-on career in this high-demand field.

David Latour

Animation and 3D Animation & Character Design

David Latour is a Coordinator at the School of Hospitality & Creative Industries, helping shape the next generation of creative talent. With nearly three decades in the animation industry, David’s work spans feature films and games, including credits on Mars Needs Moms, A Christmas Carol, Star Wars: Episode II – Attack of the Clones and Jurassic Park III. He also connects with aspiring creators through hands-on outreach, tutorials, and demos that bring real production techniques into the classroom.

Office Administration - General/Executive Program Coordinator

Blythe Allman is a professor and Program Coordinator in the School of Hospitality & Creative Industries who brings extensive administrative leadership into the classroom. As an alumnus of Fanshawe’s Office Administration - Executive program, she leads the modernization of courses in executive office procedures, project management, human resources, and event facilitation. Drawing on her background in school psychology, Blythe designs inclusive, practical learning experiences that help you develop the confidence, advanced software skills, and professional judgment employers seek in high-demand administrative careers.

Work with real guests, clients, and industry partners across our public-facing venues, digital media projects, and administrative simulation spaces. You’ll refine your professional service, communication, and client management skills in high-tempo, practical environments.

The well-rounded food and nutrition services program at Fanshawe’s School of Hospitality has given me a deep and practical understanding of nutrition, providing a strong foundation for my future career.
